I was disappointed in this order half of the peppers were already red and I had a few that had gone bad already.

Hi Doris, I'm sorry you had some in-transit spoilage! As to the red, this is totally normal. It means the chile was nearing maturity when harvested and, like a peach in a paper sack, continued to mature in-transit. The red can be roasted, peeled, and mixed in with the green for beautiful contrasting color and a slight addition of a sweet and smokey flavor.

My fondest Jr. high and high school memories growing up in New Mexico, was roasting green chilies on a backyard BBQ grill, with a dear older couple. Fred worked on the railroad, and the end of the line for him was close to where he could get fresh Hatch green chilies every year. He would come home with a huge gunny sack full of them fresh from the fields. He would call me up and we would coordinate a day and spend the whole day sweating, roasting, peeling and packaging them all. His sweet wife Irene, would keep us in cold drinks and snacks but all the while we were looking toward the end the day where our last task was making a huge platter of chile rellenos. The 3 of us would eat them with pure delight and enjoyment. I'd go home with a burning tongue, a full stomach, and my half of the packaged green chile to enjoy throughout the fall and winter with my family. 10 years later I moved to Washington state for a job and now 30+ years later I am still here. Most of those years were spent trying to find good green chile! I would get chile care packages from family and friends who felt sorry for me but as our family grew the demand for good green chile also grew. I tried green chile grown in eastern WA, which is much the same climate where green chile is grown in New Mexico but it just wasn't the same. I am not a green chile connoisseur by any means but though they looked good they just didn't taste the same as a Hatch green chile. Finally found you can order green chile online so tried a few of the companies. Some were ok...one company I liked but they were not consistent. One year I got a box that had almost as much sand, stems, and leaves as green chile. Well one year I found The Hatch Chile Store and gave it a try. Now it is my one and only for fresh green chile!! Year after year they are consistent, have great service, chile arrives fresh and flavorful. The boxes are full with no added sand and leaves, so I feel they really care about each and every box. I have ordered a few different varieties and we have loved them all. The pre-order capability is great! I am a very grateful customer and expect to be for a very long time. Thank you Hatch Chili Store for bringing me a bit of New Mexico every year! By the way, when our box or boxes arrive we spend the day roasting them with a dinner of chile rellenos at the end. The tradition continues... thank you Fred and Irene!

The green chile did not have any meat to make to stuff the green chile with cheese . That why I bought it. She all I could scramble eggs with green chile pieces

Chil's were wonderful. A few were bad, but it didn't ruin the other ones. Actually got another batch from a friend( not the Big Jim"s) and they were wonderful too. No bad ones in that batch. These are my Birthday Gift for life from my friend. Lived in Santa Fe before moving here, and missed.my chilies, now I can get them. Thank you

After visiting Santa Fe a few years back, my husband and I were hooked on the heirloom Hatch Chiles we ate. We wanted them year round to make pork posole. Every summer, we look forward to our yummy shipment of Big Jims with just the right heat and that great Hatch flavor to last all year long.

These chillis are delicious!!!!! Roasted them on my grill then I made pork green chili. Super tasty!!!! I highly recommend these chillis!!!!
