“Everything arrived fine, peppers were still fresh and in good condition. Peppers were very tasty but heat was surprisingly lacking. I saw the note that the other medium variety was mild so I ordered the hotter (well it was supposed to be hotter) Big Jim, but the heat was limited to the seeds. Still tasty but I had to add more jalapenos to the chili to get the heat right. Would have given a better star rating if heat was same as its been in the past”

Gregory, all our chile is a hint milder than usual and the heat will actually all be in the vein. Any on the seeds is from coming in contact with the vein during roasting. Big Jim is a very inconsistent variety and you may find a few that are significantly hotter than the others. Since this is a natural product, we see a great deal of variation from year to year and box to box. This year, we've had a lot of rain which affects different varieties differently. We haven't noticed enough of a decline in heat to put up a note on the Big Jim like we have on the Joe Parker but we have noticed that it's a milder year than usual.

“The green chilis had lots of spots on them this year. Lot more waste than other years. The red chilis were perfect. I've ordered the green chilis roasted & frozen in prior years. Just not up to par this time.”

“The order arrived quickly and the chiles were fresh and green as described. We just got around to roasting on the Weber Kettle Grill, but haven't tasted them yet. Overall very pleased with quality and quick service. The price ($30 / 5 lbs.) was a great since it included priority shipping.”
