“Some of the Chile had no heat to it at all. It was fairly tasteless. I am not sure what went wrong. The Chile arrived in beautiful condition and I roasted them on the grill. Sometimes when the Chile is roasting, and I get a breath of the "fumes", it will make me cough. It never happened with this batch. I made salsa and had to keep adding more and more of the Chile's to get any flavor. I would rate this order as mild to medium with very little medium.”

Terry, Big Jim always has a great deal of variation in the level of heat. This is why we advertise it as such on our website. If you'd like a straight Hot, you'll need to order Sandia which is our Hot variety. Since you're unhappy with the level of heat in this batch, I'll get you a free box of Hot. You will need to pay for the shipping though if you'd like the replacement box. Let us know if that's what you'd like to do by emailing support@hatch-green-chile.com in the next day or two.
