“More than some five years ago, we had bought green chili powder from the chili institute in Las Cruces. At that time, the chili label did NOT say ‘do not consume uncooked ‘. We simply shook the contents onto our eggs etc without further thought. We were unhappy to see the new labeling. It certainly makes a difference in how the product is used. It will perhaps keep me from ordering any more in the future. Linda Cozart”

Hello Linda, We apologize for the confusion with this product. Since our powder is made with sun-dried pods. Since the chile is never cooked during this process the FDA requires us to place a "Not Ready To Eat" warning on all of our chile powder. Personally, I use the chile powder on everything from popcorn to chip dip. Thanks, The Hatch Chile Store
