“I have been eating Hatch Green Chile for the past 40 or more years. Since my first introduction to Hatch Chiles in the 1970’s, we have always kept a supply in our freezer because we live in Alaska and aren’t always able to get fresh roasted Chile’s during the season to process ourselves. When we can, we do get the fresh chiles as we are addicted to the unique Hatch flavor. We order frozen chopped chiles, either Big Jims or Joe Parker’s, as they process and freeze them as well as we can. Of course we miss the opportunity to have them fresh during season, but we need to have a continuous supply as we eat green chile several times a week in some way or another. We don’t order the hot because our friends and acquaintances here in Alaska who may share a meal with us having Hatch chiles in the recipe, are not conditioned to the hottest varieties of Hatch chiles as the locals in New Mexico.
