They ship in 1lb plastic packages in a styrofoam cooler with dry ice, so they are in great shape when they arrive. The package size is convenient for a batch of green chile stew! “I live rather far so it wasn't a surprise when the chile arrived with one sort of de-thawed (we just ate that one first) the rest went straight into the freezer. The reason for my 4 stars is because of the heat/spice of the chile. I ordered medium because I wanted some spice but not overwhelming. We ended up with a lot of very mild (zero spice) and just a few very spicy ones. Hardly any mediums. It doesn't change the flavor of the chile though, we/I love hatch chile and will keep buying it! I know it's hard to get them to grow and produce the right kind of spice. Over all though, I love them.”

Jessica, There has actually been a notice up on the website all season which states "2016 Medium is running a little milder than usual. Please order Medium-Hot if you want a good kick." in bold, colored letters. I'd be happy to get you a box of medium-hot to replace the medium and would discount it for you since you missed the message somehow. Let me know if you'd like to proceed. Best, Preston

“I have tried the Joe Parker chilies in three dishes. Enchiladas came out delightful. Next time I will have to punch the heat up A LOT with another pepper variety because in each instance I had to add powdered chipotle to get a little authority. Then again, 50 years ago on our honeymoon, my wife carried a bottle of Tabasco in her purse ... which might say something.”

“I love that I can get roasted and chopped fresh green chiles straight from Hatch NM. I can't say it often enough that hatch green chili is never available in South Florida. This product and online store is the best!”
