The chilies are excellent, we just made a batch of green chili stew last in fact. The flavor is good and spicy. I highly recommend chilies from Hatch Chili Store, honestly you can't go wrong.

I bought the roasted, peeled, seeded and diced hot green chilies. They arrived in two days, frozen solid in one pound packages. The Sandia is purported to be a hot chile and delivers on that claim. It certainly will not be mistaken for a mild chile. These chiles have a deep roasted chile flavor along with its heat. I did not, however, find it to be hot enough for my Colorado taste buds. Unfortunately, finding really hot chilies is not easy. Even the street vendors have to sell me what they call "dynamite" (don't know what the name of that chile is) to reach the heat level I seek. They will roast them but I then have to peel, seed and dice. Without commercial exhaust air equipment this is almost impossible to do for any quantity (20-25 pounds). My plan is to get just a few pounds of the "dynamites" and package them in maybe 1/4 pound packages and add them to a pound of the Sandias for my recipes. Good stuff Recommended.

Very mild, no heat at all. Otherwise good flavor.

Just as delicious as I remembered it to be. Just wished the ground red chile wasn't so expensive. I'm truly enjoying the chile (both green & red).

Delicious! I'm a Texan who made frequent visits to New Mexico as a child and think of the cuisine as an almost magical ideal that I'm always trying (and often failing) to recreate, but The Hatch Chile Store has made my attempts a little easier :). I ordered a pound of frozen green chile on my first order to try this service out - the peppers were not fully frozen by the time they reached me, though it was late Spring in central Texas so that's no big shock. I immediately put them in the freezer after delivery and they were fine. I used many of them to make Green Chile Stew for a crowd, and it was awesome! Plan on using the remaining chiles to make some enchiladas! I intend to order more, probably when the weather is a little cooler! Note that the roasted Sandia chiles I ordered were pretty darn hot - not for sensitive palates! I plan on ordering some Sandia and some Big Jim or maybe Joe Parker to mix together next time.
