“I entered a chili contest, having just moved to FL. I have NO clue what is the local taste in Chili. I figured a chili verde con puerco y posole might appeal to a warm weather, "fitness" audience. I started my research, knowing that the best New Mexico chilies were Hatch chilies (is it the "terroir"). I ordered 5#s of Big Jim - medium hot - frozen, peeled, seeded and chopped. I was able to access my order and received great communication at every stage. The chilies were delivered, as promised in an insulated container with dry ice. The 5 packages were rock hard when they hit my porch. I let them thaw while preparing my chili. They taste terrific. The heat is "back-of throat" medium hot so you taste the chili flavor. They cooked in well to the Chili Verde together with some home roasted poblanos and jalapenos. The flavor is more "fruity" than "grassy"- not sweet, but not bitter. The texture is so much more substantial than canned "Hatch" chilies.”
