“I was extremely pleased with your fresh red chile. After carefully roasting and peeling the chile (very labor and time intensive), it made the best enchiladas I have had since I was a small child (long time ago). Thank you.”

“Not sure I would order the red again. I’m just more of a green chile person. In the past I’ve enjoyed having some late season green that’s turning red mixed in to cut some of the heat, but this years green harvest wasn’t that spicy.”

“I buy these for my son and daughter in law, who's from New Mexico. They said this most recent batch wasn't really hot enough to be "medium"hot", but they were still wonderful and flavorful, and would be grateful if I sent another 10-20 pounds. :-D”
