“My fresh red chile (Big Jim) medium spicy order was just as I had hoped. It was delivered as promised and was fresh when it arrived with 2 day delivery. My only comment is that I had expected it to be a bit more spicy as it was mild at best, but very tasty and flavorful as fresh red is typically. I roasted it and then package it and put it in the freezer for future use. I will buy from The Hatch Chile Store again. I had placed an order with another company and they called me at the last minute that they would not be able to fill my pre-order. I was panicked but very happy when I got on-line and found that I could still order from the Hatch Chile Store!! Whew! Close call!”

“Received the red chilies in a box fresh ! About 10 were in pretty rough shape had to throw away ! Roasted the rest with olive oil , salt and pepper came out good! Let them cool and peeled the skins off . Some were easy others were very tough to get skin off ! Taste was excellent !”

“I have ordered your green chilies for several years. This past August, my wife and I were visiting friends in Silver City,NM and severed a Hatch Chile red sauce they made from the juice of Hatch Red Chilis. We were so impressed with the favor that we ordered your Red Chilies which were delivered last week in September. It was easy to make the sauce which we shared with several friends. WOW.. the response was that we will have a party next year making red sauce for 4 families to last all year.”
