“You must understand my Mom and her siblings were raised in Roswell, New Mexico. My Uncle went to New Mexico Institute. We know our Chiles. I ordered medium red Chiles. They were INCREDIBLY HOT. TOO HOT! We will adapt. I look forward to my "I DARE YOU" blue corn, chicken enchiladas over the Christmas Holidays. Question we all had as a family with New Mexican roots, were those red Chiles meant to be eaten?”

“I ordered both green and red this year. In fact I roasted and peeled a bunch of red chiles today. Both types are so delicious! The orders were timely and the chiles were in great shape. Thank you! We're next door in Arizona and next season we're coming to Hatch!”

“I moved from ABQ to the east coast, getting fresh Hatch green and red chilies doesn't happen here. I am so thrilled I was able to get my chilies from you! They are absolutely fantastic and we are truly loving a taste of NM way out here. Your chilies arrived in perfect condition and taste even better!! “Your red (medium hot) chilies have WONDERFUL flavor, especially roasted (which we do ourselves)! The one-day delivery of this product is the best choice. All that said, some chilies do arrive dry and wrinkly, some arrive wet and/or moldy (in the same order/box). Thank you for the 10% refund. “Package arrived promptly and the Chili's were in good condition. I wish this batch had a little more heat to them, but their site does mention that the Scoville Scale is random based on the conditions. Sad that the shipping season is so short as I need another 10lbs.”
