“In August, my batch of freah Hatch Green Chilies gave me an aromatic afternoon at the grill and a winter’s worth of Hatch chilies. Then a week or so ago, my Fresh Hatch Red Chilies arrived. First, I used one with my last home garden Tomato Pie of the season, to crank it up A notch. Inspecting the rest I noted that not one pepper was bruised or past peak. I chopped and froze the lot, and portioned the chopped peppers into 4 oz freezer bags to bring the desert to my upstate New York winter. Your company is terrific!!!”

“I can't rate these higher because about a third of the box had chilis that were wrinkly and mushy, like they'd already been steamed. You tried to tell me that was normal, however the rest of the box were plump and crisp. I was unable to roast, peel and can the bad ones. I won't be a repeat customer, due to the fact that I was told the bad ones were normal for your product.”

“I smoke them for a couple or three hours on my big green egg at 200 degrees. Put them through my wife's juicer, add salt. Put it on all the things. Yum.”
