“We ate the oysters on Christmas Eve - so pretty soon after you delivered them. Fresh oysters - of any variety - are usually plump and accompanied by lots of liquid. Hardly any of the Carlingfords had any accompanying liquid. They looked as if they had been on a strict diet in the week before delivery and had been breaking down their own flesh to survive. The taste was OK, but they were nothing like the Carlingfords we’ve eaten at the Shelbourne Hotel in Dublin.”
