This plum sake has a pepper flavor that, in combination, is quite intriguing. The ginkobai isn't too syrupy or sickly sweet, and the pepper's heat is on par with an infused spirit. I tried it a few different ways as the profile's uniqueness really excited me, almost like finding a new seasoning ingredient.

My first experience with plum wines. The spice is intense but short lived and not too overwhelming for someone who is sensitive to spices. This alcohol is very very rich and super sweet, with a hint of tart. It was delicious but a little sweet for me so I could only handle one or two small sherry glasses. My best comparison would be a less viscous amaretto with less of the marzipan taste and a more fruity tart taste, with a nice spicy finish. Paired wel with grilled octopus and barbecue

This umeshu (plum wine) was great. It starts off nice and sweet and then bam a nice and spicy finish. The sweet and spicy flavor do compliment eachother perfectly.

Tried this first at a local Japanese restaurant. Had to have it at home also. Sweet desert Sake with hot kick.
