“I paired this 24 month 55% Ginjo koshu on a recent sake night with sake steamed scallops and clams and sautéed pancetta (steaming with a different sake). Our 6 guests thought this Junmai’s Gohyakumangoku riceiness, and especially its pinkness, served in a clean clam shell, made a great pairing, although I believe almost all premium sake pairs with almost anything.
