“As I am discovering with Nama Genshu sake, when you first open the bottle, it tends to have a lot to say. This one was still quite quite cold on the first try and had a bit of sour note with a lot of presence. I have found after opening it, is letting it sit (in the fridge) for a day as it lets it mellow a bit. I enjoyed more as it settled down. I let it warm up to room temperature and though that the flavor balanced out better. It is not on the top of my list, but I still enjoyed it.”
