Excellent sake. Once the polishing rate hits 50, it's a whole different sake. The excess starch is taken away with further polishing, leaving more of a "creamy" taste, at least in my opinion. It's hard to describe. But, junmai daigingo is always no added alcohol, and at least 50% polishing rate. The best, this one included!

An excellent daiginjo at an excellent price. The nose has hints of pineapple and pear. The initial taste is clean and bright followed by fruit. The sake starts off smooth but has a tangy finish.
