Miho Fujitaさん has created a unique, sensational brew with Yuho “Rhythm of the Centuries”. Can a saké be “sexy?” If so, then this long legged lady deserves the title. What fun! Cuddly up by the fire with a chilled tokkuri 徳利 of this fine premium bijin 美人 (beauty). This is what saké drinking is really all about; it’s about having fun and celebrating life. Round, rich, and savory. This brew seems to whisper, “drink me, kiss me, love me.” Highly recommended. Kanpai 乾杯

Rich flavor. We love the story of the owner of this brewery. Her story is inspirational. We followed her advice and paired this with pork - and only pork (after several other dishes served with other sake) - seared pork belly with a little Japanese salt for dipping. Outstanding sake!

Very fun. Pretty unusual, and has a definite character. I wouldn't drink it with something like sashimi that has itself a subtle character. But with a very strong flavored dish (ramen, gyoza, etc.), it pairs nicely.

I ordered this sake to use as an example in my “Ordering Japanese Sake in a Restaurant” lesson (coming soon) in my Japanese Faves series on my Chef’s Apprentice YouTube channel. This is a good example of a Kimoto made with the yamaoroshi method. It is also a good example of a Kushu, or aged sake, in this case 4 years. Interestingly, it has an RPR of 55% (according to the website, not the label) but for an unknown reason the brewery chose not to call it a ginjo. I enjoyed it very much.

Goes perfectly with Japanese home cooking. The story behind the name is as cute as the sake is fabulous. (Very!) This sake has a great taste that can hold its own with flavorful food. I enjoyed it with yakitori. It was a lovely evening.
