Really nice knife, well made. Made one for myself and another for my sister after she saw and used mine. My only critique would be the pins. The pins didn't stay together well, or that was my impression; not a fan. Decided to used machined screw type pins.

These knife kit is average at best. Yes, it is sharp...as another reviewer stated. But the Rockwell Hardness is only 54-56. This is at the low end of a culinary knife. Don't expect it to stay sharp for very long. And the rivets that are included are very cheap looking for someone who is investing their time in making a handle. One positive is that the knife blade is fairly light weight. But can't comment on the balance and 'feel' as the handle is not yet completed.

I've now done the entire selection of Zhen knives and the steak knife set. They are all incredibly sharp and beautiful. This bread knife might be the sharpest knife I've ever used in the kitchen. It cuts through bread well, like butter. A few tips you might consider. 1. skip the rivets and go with mosaic pins. They are easier to do and far more attractive. I cut them slightly long with dremel /cutting disk and sand them flush while shaping the handle. 2. epoxy - I use a dark gray 6 minute as it tends to be less visible than clear. 3. a belt sander and some small drum sanders make life much easier. 4. If possible, let your customer judge what feels right... for truly custom fit. 5. Go with very hard wood. I used lignum vitae for all handles. No finishing needed if you sand it w 600 and it's almost indestructible. 6. tape the blade or there will be blood.

So you can use this as a bread knife, and it is quite good. But this is the best brisket carving knife you will ever use!!!! I have built several of these for folks who do hundreds of briskets, and they say this is the best knife they have ever used. If you need a carving knife, think about this one doing double duty.
