What was your primary motivation for purchasing this course? Pursue a hobby
Vegetables are often treated as an afterthought in cooking, relegated to accompaniments rather than taking centre stage. This course completely changed how I view vegetables. Chef Marco also teaches the sous-vide method, an approach that has removed much of the stress from my cooking. Finally—and perhaps most importantly for me—when performance anxiety creeps in, I channel Chef Marco’s calm, grounded approach, and the stress simply evaporates.

An instructive insightful presentation by someone who is clearly a msster of his craft. I have no hesitation in recommending this video even for who have no intention of ever cooking a vegetarian meal!

The cauliflower with truffles is probably the best & delicious dish I've ever tried. All of the recipes are so easy and useful. Who'd have thought a paper cover would improve the taste of a sauce by so much? I didn't and so I am surprised a little with each class. Go Marco !

What was your primary motivation for purchasing this course? Entertainment
What I wanted was a joyous celebration of vegetarian cooking - what we get is a chef who used to be vegetarian but isn’t any longer, and times when he says this could be adapted for meat eaters. Many of the dishes are boring, such as risotto and many are over complicated. I would prefer a vegetarian chef who celebrates veggie cuisine. I haven’t finished the course as I was bored with it in the end and hate to leave a review such as this.m, but really would prefer a veggie or vegan chef not reliant on meat dish methods. However, I’m sure many cooks would learn something from his methods.
