“Got my large carbon steel pan searingly hot on a bbq. Little oil, salt and rosemary on the meat. Placed in the pan for 3 minutes each side, didn't move it. Rested for 15 minutes. Cut thinly against the grain, fabulous. The inner part of the steak was blue and cool to eat. The meat was Incredibly tender and flavoursome. Not a piece of meat for anyone who likes it cooked past rare. If overcooked this will become more chewy. The leftovers were just as good cold the next day!”

“I ordered 2kg of beef skirt to collect from the Aldeburgh shop. Fantastic service, butchers know what they’re doing. I marinated the beef for 36hrs, bbq for 5 mins each side and rested for 20. Thinly sliced across the grain, awesome. Will definitely order again”
