When you can't obtain fresh grown to roast on your own, the roasted green chile (chile verde) and late harvest green and red is my go to replacement until growing season comes around again. The red chile (chile colorado) is my go to replacement when I don't have any chile molido (ground red chile) is the perfect substitute for my home made chile colorado.
