I ordered fresh red and paid for the expedited shipping so it would get here quickly to lower the chance of spoiling while in transit. It arrived quickly and we didn't have very much spoilage. I expected some. It's going to happen. We ordered medium because I was too late to order hot. It is more mild to medium. Good flavor though. I'll be ordering earlier next year but will be ordering again.
