My family has been ordering chiles for over 35 years, the last 5 or so from Hatch Chile Store. This year's medium (Big Jim) and hot (Looked like Sandias but hard to know for sure) were the fleshiest, hottest, and most flavorful in memory. Knowing they ship on Tuesdays is a big help for planning out when to order--we ordered 5 bushels on the Wednesday before Labor Day Weekend with the goal of roasting Friday/Saturday the next week. Chiles shipped on the following Tuesday and arrived Thursday via the guaranteed 2-day shipping and I was able to refrigerate all until roasting time Fri/Sat, which kept spoilage to an absolute minimum. Even their marketing e-mails are mixed in with some decent recipes and chile products I would actually be interested in. Can't wait to roast again next year!
