I have ordered Hatch chiles from the Hatch Chile Store for several years running now, and am always delighted at the quality of the peppers. They arrive promptly and in great shape, ready for roasting.
The communication and follow-through is a real bonus, too, with e-mails to check on the delivery and condition of the peppers.
I recommend subscribing to the mailing list, too: we have gotten some really nice, flavorful recipes, too.
I roast them, and freeze them whole (unpeeled) and enjoy them all through the long Maine winters.
