Love my Chile from The Hatch Chile Store!!! This is my Third year in a row. They always arrive in excellent shape. Then I roast within 2 days. I have roasted them on the grill and in the oven on broiler - in both cases putting them in a brown grocery bag to steam after. Then putting them in freezer bags to last the rest of the year. They are a little expensive upfront and it takes an afternoon to 'put them up' for keeping. But, when you consider they last a year and taste better than anything you can get 'pre-made' in a can or jar - it is so worth it and likely not that expensive per serving! Though I have been known to eat a whole gallon bag by myself in one sitting. =) P.S. This year I pre-ordered. Then due to surgery July wasn't a convenient time to get then. Hatch Chile customer service responded quickly and had no problem holding my shipment for a more convenient time!!
