We traveled to Hatch this year for the 50th and secured 3, 40# bags of fresh Chile from one of the vendors downtown to take back to Central Texas. Two bags of Big Jim medium and one bag of Sandia Hot. The hot bag was marked differently but I mentioned to my wife as we were putting them on ice for the trip home that they all looked like Big Jim's and guess what they were, so we had an abundance of great tasting medium chile but no hot's. After being home for a few days I decided to get online and get some shipped. My first stop was The Hatch Chile Store where I ordered a 25# box of Sandia Hot. They shipped one day later than expected but arrived two days later in excellent shape, firm and crisp, no limp soldiers in the box. I put them on ice in a large cooler and will be roasting them in our Az. Sonoran Chile Roaster this afternoon. I took one inside and roasted on the stove top for a taste test. The flavor, heat level, and texture met my high expectations.
