Ordered my chilis late but got them in a couple or so weeks and started to roast them immediately. I only found 6 or 8 that I had to pitch out of the 25 lbs. They are so beautiful and tasty and am looking forward to a big batch of green chili from my recipe from my time in Flagstaff with my lovely neighbor Evelyn. Eve turned my wife and me on to the green chili by ordering 50 lbs of Hot Hatch chilis back in 1978 and splitting them with us. My wife found out the hard way about pealing the chilis and spent the night with her inflamed hands soaking in water because of the fire from the chili. For you Eve.
