We made several orders to the Hatch Chile store -- some fresh and some frozen. All the deliveries were on time and in good shape. We roasted about 35 pounds of fresh chiles over our backyard firepit, peeled them and then canned them (using a pressure canner). The smell of roasted Hatch chilies is so wonderful! They canned beautifully but our supply is shrinking rapidly as almost everything we cook these days seems to benefit from some roasted chiles! I am seriously considering your apple and Hatch chili galette recipe!
