Being born and raised in the Texas Panhandle, I was weaned on Hatch Green Chilis with New Mexico being so close. Hatch Chili's are something you never get tired of eating or trying in new recipes, but I will have to admit ... that getting a fresh batch in Sept. or Oct. and roasting them outside in my chili roaster and then making a big pot of green chili with some fresh homemade tortillas is my favorite, and The Hatch Chile Store is who I turn to for anything that has to do with "Hatch Chilis".
