Having met my wife in Tempe over 40 years ago, I have been learning about and loving to eat Mexican/Southwest food. Now back here in Maryland where people do not know green chiles, my favorite Mexican dish is a green chile burro, enchilada style. And my wife's Mexican recipe for green chile is the one from her wonderful friend, who shared Rosie's Family Green Chile recipe. And, of course, Hatch green chiles make the VERY BEST green chile burros, let me tell you. We have started buying over the last few months, and now are beginning to turn other folks on to these wonderful chiles. Give me a couple of weeks and I will be reaching out again.
