I have hatch chiles before in restaurants, but this year I decided to buy some from New Mexico.
Sooo glad I did. I ordered medium and they have some heat but not too much. There is just something special about these chiles. When I add it to any Mexican dish or salsa, but my favorite is chile
soup. Doesn't overpower any of the other flavors, but it adds a noticeable, delicious accent.
