Eagerly waiting for the arrival of my box of Hatch Chilles has become a welcomed summer ritual. As usual, my box arrived as promised and the chiles were in excellent condition. I worked quickly this year and tried some new approaches to roasting the chiles which made the assembly line of cleaning and processing them very productive. We had our first Hatch chile pizza and omelets this past weekend and look forward to many more meals throughout the year.
