I used the Hatch Red Chile Sauce this year for my posole. I didn’t have time to rehydrate chiles. The sauce is heavenly ! I also used red Chile tortillas for stacked enchiladas . Both are now a staple in my home. Those tortillas are simply delicious . Just a tiny bit of heat but not too much for those in my home who can’t handle much heat.
