“I am addicted to green chile. This is the best I have tried in 60 plus years. Can't imagine scrambled eggs without Hatch chile. Pork shoulder cooked in the green is as good as it gets. I have used the red sauce for enchiladas and am pondering the "Red Sauce Bloody Mary", because the flavor is so good. Keep up the good work.”

“I ordered the fresh roasted chilies and the posole seasoning. I was very impressed with them. I've already used some of them in a chile verde along with the posole seasoning and it was fantastic!!”

“I ordered the Joe Parker variety because the hot are too hot and the mild don't have enough flavor with some heat. The chiles are good. My only complaint is that there seem to be a lot of smaller sized peppers. Also, it took over a month to get the peppers after I ordered them.”

“I recently ordered ten pounds of fresh green chile. It came quickly and in great shape. As a neophyte chile roaster it took me a while to master the roasting process, and finally settled on using a charcoal grill. P.S. The resultant chile is delicious!”

“Ordered 10 lbs of fresh chilis with regular shipping, about 6 peppers were bad which I accepted as the lower rate of shipping. My wife made rellenos last night and they we're awesome. The peppers had great flavor with the occasional HOT one which I'm familiar with big Jim's truelly med-hot. Be ready to roast right away if you choose economy shipping.”
