Got a Question?

Do you roast them first before you freeze them. Can you still buy them fresh?

Did I read that correctly, one dozen tamales for $64?
Asked by Virginia Hertel PhD (1 year ago)
That is a price including shipping, dry ice, packing materials (cooler etc) delivered to your door. More than half of the price is the shipping, packaging, and delivery unfortunately :( That said, you can save by buying more than one dozen. You get 20% off 2 of our frozen products and 30% off any 3 or more.

Is this sauce good to marinate pork or beef to make tamale meat

Hey Rick, most of our sauces are great for marinading beef, especially our fresh red or abuelas red.

Different products are delivered through different methods. Our frozen items are shipped via UPS. Our Fresh chile and dried goods(sauces, salsa, powders) are shipped via FedEx/USPS.

Do you ship to British Columbia Canada?
Asked by Richard Driskill (3 years ago)
While we can ship any of our products anywhere in the United States, we can only ship our dry products internationally. Dry products are any of our salsas or sauces, powders or seasoning, dry chile pods, nuts, or our ristras/wreaths. I'm afraid we cannot ship any Fresh Hatch Green Chile, Roasted Hatch Green Chile, Rellenos, or Tamales abroad. If you would like to set up an international order, all you need to do is email/call us with your name, shipping address, and the items you would like to order. We will create an international shipping label for you and create your order. To pay, we can email you an invoice that you can open to enter your card information, or we can get that information from you over the phone. If you have any questions about dry products or making an international order, please let me know :) Additionally, we do have some international customers in Canada who have friends or family located close to the border (i.e. Northern Montana, Washington, North Dakota, etc). These customers will have their items shipped to those friends/family members, and then they will meet up with them to get their products once they've been delivered. Is this something that you would be able to do or interested in doing? If so, we can certainly move forward getting that order set up. Let me know what you think! :)

I ordered medium chopped green chili's. Do I have to remove the seeds? I don't want too hot.
Asked by Betty House (3 years ago)
Hello Betty, The seeds are totally optional to your liking! The heat is actually going to be stored in the veins running along the inside of the chile pod. Thanks, The Hatch Chile Store

How to cook the tamales
Asked by Cheryl Palm (3 years ago)
Hello! Here are the best cooking instructions for our Tamales (1) Remove 2 tamales from bag, place in steamer, cover and steam for 10-15 minutes. (2) Place 2 Tamales in a plastic bag add 1tsp. water. Place in microwave on high for 1 minute thawed, or 3 to 4 minutes frozen. (3) Place Tamales on a heated comal (griddle), turning occasionally until warm.

Baking Chile Rellanos
Asked by Linda Bell (4 years ago)
Hello Linda, These are our recommended baking instructions: Defrost the rellenos slightly (30 seconds in the microwave or 10-15 minutes left out). Then pan fry the rellenos on the stove for 7-10 minutes, or deep fry them at 375 for approx. 4 minutes in the light cooking oil of your choice. Alternatively, Air Fry on 400 till your cheese is thoroughly melted (typically around 9 minutes per 3 rellenos).

What is the heat level of the green tamales compared to the red pork? Also I would like to order salas but I don’t find a description to differentiate one from another. How can I get some information with knowing heat levels? For eating with chips? Which are used for enchiladas? Which are good poured over rellenos or eggs? The names don’t give enough of a clue? Do you make Mole? Thanks! I do wish an ingredient list was provided with all the sauces and salsas.
Asked by Linda Kalman (4 years ago)
Hello! The tamales both have a medium heat level. Each sauce and salsa has a description of what it contains. The sauces are best for enchiladas and rellenos. We not make Mole. Each item has a photo of the label which includes the ingredients list.
