I purchased a 1kg bag of Lotus Organic Wheat Grain with the intention of running it through my mixer's milling attachment and then using it to start a sourdough culture. To say the results were spectacular would be an understatement. By the third day the culture was doubling within 8 hours (from a 10g inoculation, plus 50g flour plus 50g water each day) so I started cross-training it on the target flour (German 550). By the sixth day I was ready to bake a boule which turned out slightly heavy but was otherwise well-formed. My culture is now on a regime of refrigerate 48 hours, feed and let rise for 24 hours, then back to the fridge. The culture doubles within 4 hours of feeding. The loaves it produces are perfect. Time from order to dispatch was one day. Then it took six days with Australia Post (Melbourne, Sydney, Wagga, my town) which is fairly standard.
