These are perfect: the right size, well roasted and the skin cleaned off meticulously. I like one on a toasted English muffin, with grated cheese and a poached egg. I call it Eggs Neuvo Mexico. Reminds me of growing up in the Pecos Valley in Eddy County. Viva New Mexico
