“I got 4 lbs medium, 4 lbs hot chilies. I was notified that they would be coming, then got delivery notifications. They came in excellent condition. I roasted/peeled/froze most of the medium chiles but stuffed 8 w/sauteed chorizo & smoked them, then topped w/cheese, crema, salsa. Delicious! Roasted/peeled/chopped/froze the hot peppers for future use.”

“Although I am satisfied with the Hatch chili store, I am not satisfied with order I received a few weeks ago I. The chilis were very small, some only 3 inches. I would say 70 percent of the box was small which made very hard to roast and peel. I hate to go to your competitor but I’m thinking about it.”

“Dear HCS... So, I got my 25lb box a couple weeks ago; roasted, peeled, ziploc and frozen. Then realized, "that looks kinda small, I don't think that'll be enough." 2nd 25lb box arrived Friday, roasted and peeled Saturday, bagged and frozen. Of course, tested the product out at each meal for Quality Assurance; passed 'Chef BQ' certification. As I review my freezer storage, I notice there are some vacant spots on the freezer door...”
